i made stir fry the other weekend and ate the leftovers for a few days
it was ok, but kind of bland

and v8 is sooo yucky

i do this a lot

cut up a red bell, orange bell, yellow bell, portabellos, red onion

mix up with some olive oil, put in a baking sheet

sprinkle rosemary and other spices you like on top

roast in the oven

voila... you can reheat the leftovers for a few days

if you're doing what pilgrimshoes suggested you can also add thinly sliced squash, zucchini and eggplant to it

try marinating the vegetables a little with a little of an oil based salad dressing you like or balsamic vinegar and fresh herbs

you can make sandwiches with the roasted vegetables that are way delicious

yeah i just looked to see if it was even vegetable.. says its carrot juice, and some other stuff. might still be good though.

have you tried eating veggies and chasing them with water so you dont have to chew them much? or holding your nose? that worked for me til i got use to them

I love how people fill thier diet w/ processed crap, soda, fast food, etc, become addicted to the insulin response from eating said foods, and can no longer enjoy the variety of fruits and vegatables.

i love veggies. what about squash? zucchini? you don't have to make it all mushy. you can grill it. i don't like mushy squash. what about green beans? YUM. peas? broccoli? asparagus? snow peas? CORN? okra? ok lots of people hate okra.

what about a salad with black beans, chickpeas, carrots, celery, cucumber, lettuce, olives, pepper, tomato, onion. yum could it get anymore delicious?

what about cucumber, tomato, and mozz salad. YUM.

Have you tried roasting/baking them in the oven?

Pototoes, squash, zucchini, onion, tomato (mix, match, all together, add more...) drizzled in olive oil, mixed together w/ basil, salt, cracked pepper,and crushed garlic (maybe some parm and red pepper flakes)... bake on 350 or roast for half an hour............NOM NOM NOM

another problem i have is im home for like... less than an hour in the morning...maybe 2 hours at night before i go to bed ...im at school and work all day and the last thing i want to do when i get home is cook
i've been eating a lot of sandwiches or cereal and it's getting old

Oh yeah...

Pulled chicken meat, cubed beef/lamb, fresh cooked salmon, smoked salmon, canned salmon/tuna would all be great with it.

Heck, you could cube some corned beef or beef/turkey salami and add it if you are lazy/in a hurry

i hear that. i like cooking though. i mean sometimes i'm too tired but i like it a lot. just mixing things up and seeing what happens. but if you don't like cooking, i can see how that would be a bummer

you could always plan your meals out ahead? salads are so easy. and grilling a piece of chicken to put on a salad is simple too (like with a george forman. if it is thawed it takes like no time at all). that is a yummy dinner and you can get veggies.

or like someone already suggested a stir fry, but that has the potential for a lot of sodium if you actually stir fry it. i really like grilled/roast vegetables. grilled squash and zucchini are like my favorite. you could make a casserole? mmm squash casserole. i mean maybe not the healthiest but still yummy.
