i do this a lotcut up a red bell, orange bell, yellow bell, portabellos, red onionmix up with some olive oil, put in a baking sheetsprinkle rosemary and other spices you like on toproast in the ovenvoila... you can reheat the leftovers for a few days[Edited on October 25, 2008 at 5:53 PM. if you're doing what pilgrimshoes suggested you can also add thinly sliced squash, zucchini and eggplant to ittry marinating the vegetables a little with a little of an oil based salad dressing you like or balsamic vinegar and fresh herbsyou can make sandwiches with the roasted vegetables that are way delicious

Have you tried roasting/baking them in the oven?Pototoes, squash, zucchini, onion, tomato (mix, match, all together, add more...) drizzled in olive oil, mixed together w/ basil, salt, cracked pepper,and crushed garlic (maybe some parm and red pepper flakes)... bake on 350 or roast for half an hour............NOM NOM NOM[Edited on October 25, 2008 at 8:46 PM. Oh yeah... Pulled chicken meat, cubed beef/lamb, fresh cooked salmon, smoked salmon, canned salmon/tuna would all be great with it.Heck, you could cube some corned beef or beef/turkey salami and add it if you are lazy/in a hurry
