[va]nilla wafers are tasty, but watch out for hydrogenated fat!Also, banana pudding is great, but this is better:Mini Cherry Cheesecakes (makes about 4 dozen)2 pkg. (8oz.) cream cheese, softened to room temperature3/4 cup sugar3 eggs1 Tbsp vanilla1 Tbsp lemon juicevanilla wafers (about 4 dozen)2" aluminum mini baking cupscherry pie fillingPlace a vanilla wafer in each mini baking cup (in a muffin tin). Mix first five ingredients. Spoon approximately 3 Tbsp of cream cheese mixture over each wafer. Bake at 350 for 15-20 minutes. Let cool and top with cherry pie filling. Refrigerate.
