My DE class has lectures online and when I click on them it goes straight into quicktime where the playback quality sucks and I can't rewind without watching the whole video over again.

I never had a DE class with online lectures, but I did take a few classes on campus that were also offered DE and there was an option to either stream or download (realplayer format).
You could try http://www.downloadhelper.net/ (it is a firefox add-on)
I dunno if that would work for what you are trying to do though.

Umm.....did you try right clicking the link and picking 'Save Target As'?
