I decided to type out all my mom's recipes that she has hand written over the years in her little book. A lot of them are also my grandma's recipes. It would be cool if I could write it all out but 1. i don't have super pretty handwriting and 2. I can pass it on from generation to generation. When I am all and done I am going to use a digital photo book and make it a cooking book made up of family recipes.

include pics of the family in it, or if you can be sneaky and get together with them and make the recipes that would be cool, and maybe by christmas you will have a super awesome present for all the chicks and even the guys who like to cook in your family

sadly I have no grandparents on either side that are still alive...

and I have to ask my mom wtf some of this is there are a lot of Indian recipes and i don't know the English titles for them.

when my grandma passed, my mom was cleaning out her house and found her cookbook(s)

tons of A+ recipes in there. I'm going to steal that shit one day when ma dukes ain't lookin'

Anyone have a really good chicken pot recipie from your family? I like family recipes better then internet recipes. Best pot pie I had was my ex's aunts and I don't want to e-mail him for it.

I once went to visit my then gf in Petersburg, VA, and her roommate was cooking.

We went into the kitchen, and says, "I was feeling domestic."

We are like, great, what did you cook? She had cooked...

boiled spaghetti + canned pasta sauce.

Chicken Pot Pie

Crust:
1 1/2 cups flour
1 stick salted, cold butter
1/2 teaspoon sugar
2 tablespoons fresh herbs of your choosing (I usually use rosemary, oregano, and thyme)
5-6 tablespoons cold water

Preparation
In a food processor, put in sprigs of fresh herbs. Pulse unti chopped well. Add flour and sugar, process until well mixed. Place the butter in the processor in chunks. Pulse the mixture until it resembles course cornmeal. With processor running, add water until large clumps form. On floured surface, gather into ball. Allow to rest one hour.

Roll out dough and form into whatever dish you'll be using. Make sure to leave enough for the tops of your pie. Place in freezer until good and cold before baking.

For best results, half bake crust (filled with beans or pie weights) before filling.



I use deep muffin tins because I'm too lazy to find proper sized ones lol.

Filling:
1 pound whole chicken
6 cups water
1 large onions, quartered
1 large carrot, chopped
1/2 leek, sliced
6 small thyme sprigs
1 bay leaf

1.5 tablespoons olive oil
1/2 head broccoli, chopped
1/2 large onion, chopped
3 to 4 shiitake mushrooms, chopped
1 cup green beans, cut into bite sized pieces
1/2 tablespoon chopped rosemary
(Really just used whatever veggies you normally like in chicken soup sort of stuff)

1/2 stick unsalted butter
1/4 cup plus 1 tablespoons all purpose flour
1/2 cup milk
1/4 cup whipping cream
1 cube chicken bouillon dissolved in a small amount hot water

1 egg, beaten to blend (for glaze)

Place first 7 ingredients in large pot. Bring to boil. Reduce heat and simmer until chicken is cooked through. Transfer chicken to large bowl and cool. Cut meat into 1-inch pieces; return to bowl. Strain cooking liquid into large saucepan. Boil until reduced to about half.

Heat 1/2 tablespoon oil in large skillet over medium heat. Add onion and broccoli; cook until soft. Transfer to bowl with chicken. Heat rest of oil in same skillet over medium-high heat. Add mushrooms, saute until just brown. Add to bowl with chicken and mix in next 4 ingredients.

Melt butter in large saucepan over medium heat. Add flour and whisk 2 minutes to make a roux. Gradually whisk in 3 cups stock, then milk, cream and bouillon bringing to boil. Season sauce with salt and pepper and allow to slightly thicken. Stir 3 cups sauce into chicken mixture.

Pour mixture into your prepped pies. Cover with circles of dough and press the dough onto sides of pie pans.

Preheat oven to 350°F. Brush top of each dough round with egg glaze then cut slits into each for steam to escape. Bake pies until crust is golden brown and filling is heated through, about 45 minutes.

I'd be too embarrassed to hand down anything with my handwriting on it to future generations.

Just be sure to print it out. It's so easy to lose digital copies.
