Do basic Mexican restaurants around here use on

1) Tacos
2) Nachos

?

The restaurant people never give a straight answer, and Google searches produced about a dozen possibilities from different regions and quality/authenticity of restaurants. So yes, I've tried Google, but feel free to point out to me that I should have used it.

I'm talking about places like El Rodeo and Cueva de Lobos. I realize it's probably about as authentic as a Choco Taco, but it's what I want.

See, I thought it was queso fresco too, but when I bought some at Food Lion it did not work out very well. Not as soft, didn't melt well, crumbled. Quick search suggested that many of the American versions were made differently.

But the restaurants have to be getting the good stuff from somewhere. Ideas?

Don't get me wrong -- I like the authentic stuff and generally understand the difference. But, as it happens, I also really like the cheese that they use in crappy Americanized restaurants.

that quesadilla/dip cheese at some Mexican restaurants is amazing...

somebody told me it was goat cheese, but I dunno

I bought some cheese from the Mexican section in WalmarK, but it wasn't as good.

The cheese in El Rodeo's tacos is white.
I've never seen any white American cheese.
I still suspect it's Mozzarella or some Mozzarella mix.

its not purely cheeese tho, its got alot of cream in it

i was told what it was before because i fuckin love queso, but i forgot the cheese, it wasnt anything out of the ordinary tho

I thought I covered that already, but to reiterate, Google offered a long list of different kinds of Mexican cheeses, none of which were really spot on with the tacos or the nachos. Your Savior posted pretty much the responses I got from Google:

Blanco: Doesn't work for either, because both the taco and nacho cheeses melt.

Panela: Also doesn't melt.

Fresco: Neither the nacho nor taco cheeses are crumbly

Oaxaca: Neither is stringy really.

Cotija: Neither is generally sharp.

Google also had the usual run of stupid answers like some of the ones we've seen in this thread.

found some at food lion a while back


cant remember the name but it came in a squareish container with a red lid

there was also some in a round container nearby that was also tasty......i cant remember the brand of it either. It was in the refrigerated section
