just leave them out of the water until they are good and dry. then write on them and return them to the water.

You'd have to keep it out of the water long enough for the ink to dry. If the ink dries before it dies you'd probably be in good shape. This really isn't a very nice thing to do though.

if it's a twenty fish free-for-all, then you may be screwed. if it's a one-on-one, survivor moves on kind of thing, just put them in separate, labeled cups.

also, the jersey thing would work.
