Sorry, the only thing I know about lentils is that the young ones eat them all the time

lentils + broth + vegetables = lentil soup

i like adding black-eyed peas, celery, corn, potatoes, other beans... basically just wash the lentils overnight, chuck everything in in the morning, cook on low all day turning it every so often. then apply generous amounts of hot sauce.

I was going to ask about non-soup lentil recipes in the vegetarian thread in the lounge last week. But I didn't.

my best friend makes a soup that is so YUMMY!!! ugh, I want some now.

1 cup of dried lentils
3 tbsp evoo
6 slices of bacon
1 onion diced
2 celery stalks diced
2 carrots diced
2 fresh rosemary sprigs finely chopped
2 bay leaves
14 oz can of plum tomatoes
7 1/2 cups of vegetable stock
salt and pepper to taste

1. Let lentils soak in cold water for two hours. rinse and drain

2. Heat olive oil in large pan. Add bacon and cook over medium heat for 3-4 minutes

3. Add Onion and cook till soften, about 5 minutes

4. Stir in celery, carrots, herbs, and lentils. Toss over heat for 1 minute, coating it all in oil

5. Tip in tomatoes and stock. Bring to a boil. Lower the heat, half cover the pan and simmer for 1 minute, until lentils are tender.

6. Remove Bay leaves and season with salt and pepper.

You can't have lentils without garlic... that's blasphemy!!!
