lentils + broth + vegetables = lentil soupi like adding black-eyed peas, celery, corn, potatoes, other beans... basically just wash the lentils overnight, chuck everything in in the morning, cook on low all day turning it every so often. then apply generous amounts of hot sauce.

my best friend makes a soup that is so YUMMY!!! ugh, I want some now.1 cup of dried lentils3 tbsp evoo6 slices of bacon1 onion diced2 celery stalks diced2 carrots diced2 fresh rosemary sprigs finely chopped2 bay leaves14 oz can of plum tomatoes7 1/2 cups of vegetable stocksalt and pepper to taste1. Let lentils soak in cold water for two hours. rinse and drain2. Heat olive oil in large pan. Add bacon and cook over medium heat for 3-4 minutes3. Add Onion and cook till soften, about 5 minutes4. Stir in celery, carrots, herbs, and lentils. Toss over heat for 1 minute, coating it all in oil5. Tip in tomatoes and stock. Bring to a boil. Lower the heat, half cover the pan and simmer for 1 minute, until lentils are tender.6. Remove Bay leaves and season with salt and pepper.]
