spinach lasagna

spinach pastry with like filo dough and cheese and i'm sure you could thing of something else yummy to stick in there

spinach, corn, and roma tomatoes are really yummy when cooked together (easy side dish)

spinach salad with pecans or walnuts or something and raspberry vinaigrette dressing

pasta

spinach dip (w/ artichokes!)

creamed spinach (not everyone likes this)

i make sandwiches on a mini baguette with spinach, artichoke hearts, mozz cheese, roma tomatoes, hummus then i grill it on the george foreman. but they don't use that much spinach, still yummy though

I can't find the recipe. It originally called for linguini or spaghetti; I used orzo.

Prep some tomatoes how you like - in a solid state.
Boil some pasta with lots of herbs and seasonings you like.
add tomatoes right before you drain the pasta.
Put your spinach in the colander. Drain the hot pasta over it; toss it all back in the pan, and add some olive oil and parmesan, and toss it all very quickly. You can also add (already cooked and seasoned) chicken, and pine nuts.

If I made this again in the near future, I'd probably add some peppers.

I eat a lot too although I have never weighed it.

Two spinach salads today. Had spinach salad + pasta with spinach in it for dinner last night. Tis good stuff. I feel weak after a couple of days without some greens.

crescent rolls (laid out)
spinach (chopped)
feta (crumbled)
onions (diced)
white wine (uncorked)

saute onions
saute spinach with wine, drain
add feta
add onions
cook until not liquidy at all (problematic with frozen spinach)

add mixture to crescent roll triangles, and create pastry.
put in oven until almost golden brown.

YUM.

The other day I took those stove-top mixed veggies, rice, fresh mushrooms and spinach and threw it all together since I only had one container to take to work and it was hella good. I need to find a use for spinach tortillas. Maybe like a veggie quesadilla or something.

^^ mmm that sounds delicious.
You could probably put what you just listed in that wrap.
Or do a salad wrap with spinach, cucumber, tomatoes, onion, peppers, maybe some cheese and dressing. I think using a giant lettuce leaf would be delicious too for some hot things (like the thai lettuce wraps you can get at cheesecake factory or chilis).

That's a waste of the herbs and seasonings if they will get drained. And why add tomatoes before you drain as well? Some of their goodness will come out in the hot water and be drained off. Any ingredient should be added to pasta after it has been drained.

i'd do something easy.

a spinach salad with sliced up strawberries and feta cheese. add balsamic vinaigrette and a dash of pepper and you'll be happy.

pears also work nicely, but use blue cheese as opposed to feta if you use the pears.

because you should cook spinach for only 2-3 minutes.

indians/pakis cook it for 30 minutes, and you get what you see in that pic that the OP posted.

^^that's what i meant by sautee it down. usually takes just a minute and you don't want to cook it past the vibrant green color. If it starts getting dark dark green, you did it wrong imo.
