so teh GF (~3 yrs) is coming to raleigh this weekend to stay. as a sign of appreciation for painting my room and staining my desk in the house i just moved into, i shall proceed to cook her dinner. i need ideas. i was thinking filet mignon, or something of the sort.

also, i need some wine idears ass well. she likes teh sweet wines, so nothing bitter or dry.

I've made this a couple of times for a nice dinner, its dank, if you like blue cheese, etc. The butter I make is a good bit thinner than pictured.

You could make some seared salmon with a honey dijon sauce. Asparagus goes well with that. So does summer salad with lemon vinagrette. Also, freshly baked bread dipped in olive oil and balsalmic vinegar is a good appetizer for it.

Salmon uncommon? Surely you jest.

Salmon is annoyingly common, not to mention one of the least appetizing fish out there. People complain when any other fish tastes fishy, but salmon tastes that way naturally and people are enthralled with it. Salmon is a waste of fish.

If you want good fish, try finding some black bass, some triggerfish, some monkfish, something that has an actual SEA flavor rather than the farm-fresh fishy essence that salmon carries.

Hell, even something as simple to cook as trout (season, place in oiled pan, place in oven, wait for goodness) is better than salmon.

Also, for the wine part, I don't know if you mean that your girlfriend likes SWEET wines or FRUITY wines, but if you are serving red meat, go with a Zinfandel, Shiraz, or Pinot Noir. Especially wines from Australia tend to be more on the fruity side of things. There are very few SWEET red wines, as the tannins that are in them tend to create that astringent flavor that i am guessing you are characterizing as "bitter". However, if you go with fish, there are plenty of whites that lean towards the sweet side of the flavor spectrum.

I would suggest something like a Pinor Grigio or Sauvignon Blanc for something like salmon, if you choose to go with that. If you opted for something like scallops, the Sauvignon Blanc would also work, as would something like a Chardonnay that is lighter on the residual sugars.

Duplin Co. wines are generally mediocre.

Also, no one has suggested a Cabernet, so that was helpful.

^^^Surely you're a faggot. It is not as common to come across a salmon dish as any chicken or steak dish. If I'm going to cook something for myself, it isn't salmon. For a normal person, its a halfway special meal. Hence, uncommon.

For a gourmet cook (such as yourself, apparently) then sure, go for the shutome, Mahi-Mahi, or whatever the fuck. The guy obviously isn't looking for something that over the top if he mentions filet mignon.

Salmon is the most common fish option that i ever see on restaurant menus, and is more prevalent in stores than almost any other fresh fish. So it is common. The fact that someone doesn't eat something on a regular basis doesn't mean that it is uncommon, it means that they don't opt for it regularly.

Hell, by your standards, salmon is more rare than fucking gold (i have taken shots of goldschlager more recently than I have eaten salmon, so it must be more common).

Salmon is a cop-out fish for people who either don't really like fish, or don't know how to cook it. <--(This was the tuff-guy statement you were looking for, BubbleBobble.)

I'd say that tuna and trout are much more common, but I don't have any statistics I can pull out of my ass like you do. Where did I say that salmon was rare? Regardless, its still a good dish that is easy to prepare...which apparently makes it inferior to all other fish. I'm still saying is an uncommon dish.

Anyway, this is a retarded argument.

Roasted pork tenderloin rubbed with smoked salt and herbs topped with a balsamic cherry sauce, garlic rosemary mashed potatoes, and zucchini or asparagus or whatever.

I just typed the exact post that the OP made in both normal english and whatever 12 year old english he is using. It took 2.3 seconds longer to type out the question with the 12 year old english. I think it could have been quicker (12 year old english) if I didn't get tripped up every time a comma was thrown into the sentence for no reason.

1. I like Salmon, but don't hold any notion that its a rare and special fish. Its as readily available as chicken and marginally more expensive.

2. Its versatile and you can dress it up to a degree, but I would never prepare it as a "Sign of Gratitude" dish. Its not worthy of that status.

3. I find it humorous that two of you are squabbling over the scarcity of salmon buy using the same terms you'd use to describe the scarcity of any given Magic: The Gathering card.

4. Intentionally using "teh" several times in the OP makes me want the rip the OP's eyes out and renders anything he says for the rest of the thread null and void.

yes...if you go to nicer restaurants (not applebees, chilis, ruby tuesdays or those Italian chains) you will see that a salmon dish is always on the menu.

Here's my recommendation:

I cook this with filet instead of strip steaks and "teh GF" LOVES it. Make sure you don't overcook the filet, I shoot for the medium-rare stage...

As for the wine, I suggest:
