Ingredients:3/4 cup butter, room temperature1/2 cup granulated sugar1/2 cup brown sugar1 tsp vanilla1 egg2 cups flour1/2 tsp baking soda1/2 tsp baking powder1/4 tsp salt1/2 cup fresh blueberries 1 cup white chocolate chips1/3 cup shredded sweetened coconutI know the coconut may sound crazy, but damn it enhanced the buttery and white chocolate flavor.
7/8/2009 1:13:14 AM
Actually use less coconut than that. I just eyeballed it, it's more like 1/4 cup or less.I didn't measure. It was a last minute decision.

I don't think I need to go through the steps?Do it like how your normally do it with chocolate chips cookies.I coat the fresh blueberries with flour and dust it off before adding to soft dough. And use the folding method into the dough so you don't crush em. Make sure they are evenly spread. You don't want too little or too much on one scoop.

350-375, oven varies. About one inch balls, and then flatten it a little with your fingers or spoon.10-12 minutes, no more no less for me- I really watched the clock for this. Bake longer if your cookies are bigger. At 10 min. I would just check on them, I know it's a no no to reopen once it's in there. It's important not to overbake. Edges and surface of the cookies should like like that in the picture.Once it's cooled, the texture is between soft snickerdooldle and firmer than a muffin. They are softer because of the moisture from fresh blueberries. You can try it with dried if you like em a little firmer.

1. Cream butter and sugars until fluffy.2. Add vanilla and eggs. Do not over mix. Just enough to incorporate.3. In a different bow, mix all the DRY ingredients. Including the white choc. chips4. Add coconut to the mixed dry ingredients.5. Toss blueberries in flour. Add to dry ingredients by folding.

Let me know how it goes.I think I'm gonna try it with dry blueberries next time, just to see which is better in texture.
