i always do pan+olive oil+minced garlic, then top in the bowl with some apple cider vinegar...but i'm looking for something new.

Canned spinach is great with just a little butter.
Fresh spinach with olives and honey mustard dressing.

LK's spinach dip:
16 oz chopped spinach (fresh or frozen) to 2 packages of cream cheese
1 red onion, chopped
1 red or yellow pepper (for color), chopped
jalapenos to desired spice and taste (i use 2)
Mrs. Dash's chipotle seasoning
1 cup cheddar or pepperjack (pepperjack is better)

Mix in crockpot and stir.
Nom nom nom.

chicken florentine ring - don't have the recipe with me so I'll guesstimate proportions

16 oz spinach
12 oz shredded chicken
1 cup shredded cheddar
1 chopped red bell pepper
2-3 Jalapanos (to taste)
Garlic to taste
1/2 tsp lemon zest
1/4 cup mayo

Mix all ingredients above. Spread a crescent roll out around the perimeter of a pie pan. Spread the filling throughout and cover w/ remaining crescent roll pieces. Bake

Mix cooked/drained spinach with low fat ricotta, maybe add a little mozzarella
Stuff mixture in cooked/drained jumbo shells and place seam side down in a dish
Cover with tomato sauce (pasta sauce, vodka sauce, spaghetti sauce, marinara, make your own)
Add a little mozzarella to the top of the shells, cover, and bake 20-30 minutes

The great part about it is that you can always change up the recipe and make it a little different... use parmesan instead of mozzarella, use cottage instead of ricotta, use manicotti instead of jumbo shells, vary the sauce, etc. It's pretty much impossible to fuck up.

I made spinach stuffed chicken breast for dinner last night...Just mixed the spinach (from a can to save time...hard to beat morning glory canned veggies anyway) with salt, pepper and parmesan cheese, butterflied the chicken breast, put in a layer of spinach mixture folded back and baked....

It was pretty good.
