chicken florentine ring - don't have the recipe with me so I'll guesstimate proportions16 oz spinach12 oz shredded chicken1 cup shredded cheddar1 chopped red bell pepper2-3 Jalapanos (to taste)Garlic to taste1/2 tsp lemon zest1/4 cup mayoMix all ingredients above. Mix cooked/drained spinach with low fat ricotta, maybe add a little mozzarellaStuff mixture in cooked/drained jumbo shells and place seam side down in a dishCover with tomato sauce (pasta sauce, vodka sauce, spaghetti sauce, marinara, make your own)Add a little mozzarella to the top of the shells, cover, and bake 20-30 minutesThe great part about it is that you can always change up the recipe and make it a little different... use parmesan instead of mozzarella, use cottage instead of ricotta, use manicotti instead of jumbo shells, vary the sauce, etc. It's pretty much impossible to fuck up.

I made spinach stuffed chicken breast for dinner last night...Just mixed the spinach (from a can to save time...hard to beat morning glory canned veggies anyway) with salt, pepper and parmesan cheese, butterflied the chicken breast, put in a layer of spinach mixture folded back and baked....It was pretty good.
