I suppose I should give a real answer. As far as what you're looking for, a bar/venue (note the hierarchy there) that is open and playing metal on any given night of the week, you're pretty much limited to DiveBar on glenwood south. Great spot though, I drink my share of beer there and we play there from time to time (playing this Fri. 2/25 btw, come check it out). They don't play so much death or black metal, but the two bartenders there don't have terrible taste and you can aways just ask him/her to put on whatever. If they give you any shit, and they probably will, tell them Dave from Morose says to quit bitching and put on some Nile. Haven't been out during the week in a while but they may still do death/black metal Wednesdays, and there's always a heavy/hard/thrash/doom/somesortofmetal show on Fri. and Sat. nights.
Otherwise there are the venue/bars that are only open when bands are playing like Volume 11 and occasionally Lincoln Theater and The Brewery, as well as metal-sympathetic bars like Slims, Berkely Cafe, King's and a handful of others that will host a metal show. Just look up the schedules of those places from time to time. There used to be a lot more metal around here but the cash flow from the hardcore and hipster scenes pretty much relegated us metalheads to diehard bar owners and bullshit weeknight theme nights.
