You walk by and look in, but never walk in unless you're comfortable dropping $100 on kitchen toys

I was in a pinch and had to buy some dutch-processed cocoa at Williams & Sonoma.

I hate it when I find myself desperately needing dutch-processed cocoa on short notice.

Stoopid supermarkets and their naturally-processed cocoa.

Future reference Harris Teeter had dutch-process cocoa.

Can also substitute it with carob powder or unsweetened cocoa powder plus baking soda.

Which HT? I looked in my local HT, called Whole Foods and The Fresh Market.

It's called Hershey's Special Dark. I think technically it's a blend but I have used it in recipes calling for dutch-process cocoa 1:1. Every Harris Teeter I've been to carries it.

Stuffed hamburger press seems totally unnecessary. All you have to do is make 2 patties and merge them together around whatever you're putting inside the burger.

Also, after making cheese filled burgers several times, I've got to say I like the cheese better on top.

I found it at the Harris Teeter. It's definitely a mix--the ingredients say "cocoa; alkali-processed cocoa".
