i've done it, if you take out like two pieces it doesn't take long to thaw, and isn't different or anything
but i only do it if there is a bread product on sale, or a BOGO offer
i save them nickels 7/31/2011 1:51:02 PM |

Because I eat bread so rarely I throw it in the fridge.
It then tastes like things in the fridge, but this is alleviated by toasting the bread. I am the worst kind of bachelor.
Also, when I leave bread out on the counter it seems to spoil within a week, and since I don't really like cooking/preparing food ever I kind of need my bread to last a bit longer (like, say, through the apocalypse). 7/31/2011 1:56:08 PM |

I do it if it's bread I only eat occasionally. Like hot dog buns.
I'll buy a pack of hot dogs and a pack of buns, eat 2 hot dogs, and by the time I want to eat a couple more like a week later my buns are either stale or molded. 7/31/2011 1:56:47 PM |

i don't like freezing it (well i freeze bagels and english muffins)
but i do put my bread in the fridge
i feel like it gets moldy less fast
oh and i toast my bread so...there is no weirdness when i eat it because toasted bread is toasted bread

Freezing it -> bad.
Refrigerating extends lifespan without affecting chemistry -> good

^ why is it bad? bad in what sense?
i bet if i took a slice out of the fridge and one out of the freezer, let them come to room temperature, and made identical sandwiches out of each one (1-slice sandwich), you wouldn't be able to tell which is which. and that's even more true if i toast them both.
and btw, any environmental change affects food chemistry. 7/31/2011 2:10:10 PM |

I deal with sub rolls for a living. Thawed bread is stiffer. It tastes like 3 day old bread, but doesn't taste stale. The pro is that it tastes like 3 day old bread...1 month,2month,3month down the road when you thaw it. It's a viable option for people that only get deliveries once every 2 weeks or for families that buy in bulk when there is a good deal.
For restaurant freshness though, you can't do frozen bread unless you're a cheapo mom and pop shop with extremely low volume. Even subway and macdonalds don't freeze their bread for this reason.7/31/2011 2:31:53 PM |

My mom does it, and I would too if I stockpiled bread. Since I don't stockpile bread, I don't freeze what I do buy. 7/31/2011 2:32:39 PM |
