anyone ever tried biltong?
http://en.wikipedia.org/wiki/Biltong

I love jerky and all, but one of the best things to come out of marrying into a south african family is access to biltong. the shit is amazing.

I hate the sweet jerky...I use very minimal (if any) sweet ingredients in mine.

I make a batch every week. Been using hot and spicy seasoning. Turkey makes the best jerky from what I've experienced. Very little fat when compared to beef jerky.

^^ yeah same here. further it expands that distinction a bit

Quote :
"Biltong differs from jerky in two distinct ways:

The meat used in biltong can be much thicker; typically biltong meat is cut in strips approx 1 inch wide - but can be thicker. Jerky is normally very thin meat.

The vinegar and salt in biltong, together with the drying process, cures the meat as well as adding texture and flavour. Jerky is traditionally dried without vinegar.

"

this should appeal to those of us who like that eastern nc vinegar based bbq

BTTT

My dad's friend's son just opened Banzai Jerky. My dad ordered a bunch of different of his jerkys for us to try. I am hooked on the teriyaki and orginal peppered.

Its pretty reasonably priced too. the 3 oz bags are $8 plus $2 shipping per bag. I ordered two bags last week for $20 shipped and they showed up today. I am currently devouring one bag

"So one of our wedding presents was a dehydrator- I asked for it because I want to make my own jerky. have no idea how to do it, so lets get some recipes in here folks!"

4-6 lbs lean meat - not ground (Deer is great!)
1/2 bottle Allegro Hot & Spicy marinade
1/2 bottle Allegro Hickory Smoke marinade

Slice meat into thin strips (5 in x 1-2 in x < .25 in works great for me)
Place meat and marinade into gallon zip-lock bag, remove air & seal
Refrigerate 12 hours
Place in dehydrator (some touching is fine as long as the meat doesn't overlap)
Run dehydrator 8-10 hours depending on personal preference of meat dry-ness
Enjoy

Take some to work as you will get mad props

[Edited on March 10, 2013 at 12:10 PM. Reason : Allegro is rather expensive, but it is top of the line...i believe it is all-natural if that matters]

Bought a beef round roast yesterday. Sliced it as thin as I could with the grain

Marinade:
Teriyaki
Soy sauce
Whorchester sauce
Garlic
Black pepper
Brown sugar

Didn't measure any of the ingredients but it was a full bottle of teriyaki and few table spoons of the rest. About a cup or so of brown sugar. 2 garlic cloves. Marinated overnight. On the dehydrator about 9 hours.

Mmm good.

My best batch yet

1 London broil partially frozen. Thawed just enough to be able to cut it. Sliced as thin as I could with the grain. Marinated in teriyaki, brown sugar, little bit of soy sauce and black pepper over night. About 6 hours total time on the dehydrator.

Mmmmmm

Asked for a food dehydrator for christmas for drying fruit and making jerky. I've only used it once, and haven't touched making jerky yet. I'll try some of these recipes and see how they turn out.

Gotta make it first

I haven't made jerky in a long while so I'm rusty and it might take me a couple of tries to get it right. I want to make something that's kind of unusual. Ideas?

After 29 years I have finally discovered the glory of Jerky.

Growing up it was always presented as some kind of trashy redneck snack, so I stayed away from it, but now I feel like I've been cheated.

I've been really digging turkey jerky as a snack for my weight loss diet. I'm going to attempt to make some next week. Anyone got a favorite recipe?

Tried to make some salt and vinegar flavored jerky about a month ago and it didn't turn out so good. I think I need to make plain jerky and then maybe mist it with some vinegar. I tried marinating the meat in vinegar for about half an hour before dehydrating it and the vinegar cooked the meat which made the jerky super tough.

Try this

http://www.amazon.com/Buffalo-Wild-Wings-Seasoning-Vinegar/dp/B00DJA4XGA

I always get it on my fries there, but I think it would work on jerky just fine.

Nerp, sorry.

For those that make turkey jerky, where do you get your turkey meat? Whole foods sells whole breasts that have been removed from the bone, but they are expensive.
The last batch I did I bought 2 turkey breasts from BJs, but I had to cut each off the bone, then slice everything up. It took hours, and I'd rather not have to do that again.
The bonus though was that I ended up with 4 lbs of finished jerky and half a gallon of top notch turkey stock.

synapse, I usually get my jerky sliced at a butcher. It comes out much more uniform and the thickness is always perfect.

Do you need a jerky gun to make jerky from ground beef/turkey? I'm not into wasting money or having excess junk at the house and this tool just seems like an example of excess products I don't need. I don't really see any reason not to just mix/mash it up by hand, roll it flat, and cut it into strips to lay in the dehydrator. What does TWW think?

why would you make it from ground meat?

and i can't imagine you would need one. alton brown would crucify you for getting a unitasker.

and ever since I first heard about it on 6/7/2012, i've kept my eye out for biltong and haven't found it yet.

^Its for making jerky more like a Slim Jim.

I've never used it or desire to, but I don't see why you couldn't just work it flat and then cut it into strips.

Anyone got a good soy and gluten free recipe? Almost everything I've made calls for Soy sauce or teriyaki and worcestershire.

It can be found dirt cheap and it's a really common way to make budget jerky according to the interwebs.

I have a $14 chunk of beef (eye of round or something) in the dehydrator right now, but I really just wanted something easy to try with my first batch. I marinated in soy/brown sugar/liquid smoke for a few hours today. Cheap protein on the go that tastes better than the stuff in every grocery store is really my goal.

Hey, folks. The wife's going to visit a friend in Israel, and the girl has been been craving some jerky. Apparently, it's hard to find there? Any suggestions for some great jerky to be found around Raleigh?

My first attempt at making jerky, earlier this week, did not turn out well. It's edible, but that's about it. I wouldn't call it enjoyable. I'm eating it though because the flank was $12 and I don't want to waste it. It was a soy based marinade and it tastes like I'm just eating soy bits.
