I've fermented peppers for hot sauce, and I've fermented some other vegetables, but I haven't gotten around to trying to make kimchi(chow chow is a common use for the end-of-harvest scraps of cabbage/peppers/onions)

Chow chow and sauerkraut are all on the list for next season. This year I grew some napa cabbage from seed to see if I could grow napa cabbage and the answer was: "Yes, I can grow napa cabbage." which is evidenced by the napa cabbage I grew.
