sure, the soda is important to neutralize the acids

but it's the powder that keeps the cookies from being hard

you want Soft-batch or ROCK-batch?

you need brown sugar for the peanut butter cookies

plain for the sugar cookies

1 cup (2 sticks) unsalted butter, room temperature
1 cup granulated sugar
1/2 teaspoon salt
1 large egg
1 teaspoon pure vanilla extract
3 cups all-purpose flour, spooned and leveled, plus more for rolling and cutting

1. In a large bowl, with an electric mixer, cream butter with sugar and salt until light and fluffy. Add egg and beat well to combine. Mix in vanilla. With mixer on low speed, add flour and mix just un-til incorporated (do not overmix).
2. Preheat oven to 350 degrees. Space cookies 2 inches apart on parchment-lined baking sheets. Bake until just barely golden around the edges, 7 to 12 minutes (depending on size of cookies). Cool completely on baking sheets.
3. Decorate, if desired. Let dry at least 2 hours. Store in an airtight container up to 1 week.

Here's the recipe I've got for my family's kickass peanut butter cookies. You're missing a few things, but they might turn out ok anyway. Your risk.

1/2 cup butter (1 stick)
1/2 cup sugar
1/2 cup brown sugar
--cream together
1/2 cup peanut butter
--add, mix
1 egg
1 teaspoon vanilla
2 tablespoons milk
--add, mix
1 3/4 cup flour
1 teaspoon soda
1/2 teaspoon salt
--add, mix
~6-12 oz semi-sweet chocolate chips (optional, but highly recommended)

Bake dough balls at 375 degrees for 11-12 minutes. Makes 40ish cookies.

my paralegal, (an older women who bakes and cooks a lot) says if you do not have self-rising flour you need to have baking powder, not baking soda

You want really super easy? Mix a cup of peanut butter, a cup of sugar and an egg. They aren't the absolute best cookies you've ever had, but for three-ingredient ones they aren't bad.

I don't remember. I haven't made them in years. Just watch them and don't let them get way brown. That kind is good for doing the Hershey's kiss press down thing.

(I am pretty sure that was the recipe. Like I said, been years)

I gotta say, the peanut butter chocolate chip cookies from that recipe are the best peanut butter chocolate chip cookies I've had in my life. My sister's gotten so good at making them for me that she doesn't even measure ingredients anymore, lol.

I'm not a fan of peanut butter things. I only like peanut butter, but I will say that I tried the recipe on the butter flavored crisco, and they are my favorite cookies now.

You must top the cookies with peanut pieces.
Like this:

Actually, because of the peanut butter's acidity, baking soda is better.
(baking powder is just a mixture of corn starch, baking soda, and cream of tartar)

Quote :
"yes its self rising"
You may still want to add a tiny bit of baking soda...

the most crucial thing about baking drop cookies is to freeze the batter for about a half hour before baking the cookies

trust me

I've flipped through 3 cookbooks and your best bet is looking like a moravian-style snap cookie (since you have no baking powder.)

1 sick butter
1/2 cup shortening
1.5 cup sugar
2.5 cup flour (sift it, dur)
0.5 tsp baking soda
0.333 tsp salt
1 egg
2 tbsp vinegar
1 tsp vanilla

Cream together butter/shortening/sugar. Add dry ingredients. Add in egg + vinegar + vanilla. Roll into small balls, place on ungreased baking sheet, mash with greased glass (to flaten.) 400 degree F for 8-10 minutes. Immediately remove from pan and onto baking rack. ~6 dozen

Or

Easy Peanut Butter Cookies (use good peanut butter or these will taste like anus - otherwise super tasty.)
1 cup peanut butter
1 cup sugar
1 egg
1 tsp vanilla

Mix together, shape into 1" balls. Place on cookie sheet, press with fork, bake @ 350F for 10 minutes. Cool on rack.

Or

Peanut Butter Cookies
1.5 cup all purpose flour
0.5 cup oil
0.5 cup peanut butter
0.5 cup sugar
1 tsp vanilla
0.5 cup brown sugar
1 egg

Mix, 1" balls, 350F for 10 minutes. These are more like cookies with a hint a Peanut Butter - the above are gooey peanut butter balls that are 9.5/10. Just do not (ever) overcook them. Use a real oven thermometer also - don't trust the oven itself.

I make wicked peanut butter Snickers cookies, but obviously you can't make those with your on-hand ingredients. I'll share the recipe anyways, because they're the BIZZOMB.

Quote :
"
1 cup margarine
1 cup creamy peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
3 cups flour
1 tsp baking powder
1 tsp baking soda
60 bite-size snickers minis

In large mixing bowl combine margarine, peanut butter, sugar, and brown sugar. Mix using electric mixer or large wooden/plastic spoon until combined (about 30-60 seconds).

Add eggs and vanilla. Mix until combined.

Combine flour, baking powder and baking soda in a small mixing bowl. Slowly add this mixture to the dough mixing until smooth. This could take 2 to 3 minutes.

Take about a table spoon of dough, and press an unwrapped snickers mini into the middle. Roll dough to form a ball around snickers. You may use more or less dough depending on how much cookie you want around the snickers.

Place the balls onto a cookie sheet and bake for 10-12 minutes at 350 degrees Farenheit.
